Olive Oil

Olive Oil productionIn Gozo olives are picked at the end of September to about the middle of November. Although there are mechanical ways of picking olives, in Gozo there are still being picked the traditional way. Very often whole families will come together at the grove, spread a big net under the tree and hand-pick the olives into baskets. Once they have been taken to Gozo Cottage these carefully selected olives are pressed within 24hrs using mechanical means only.

Approximately 7 – 8kg of olives are needed to produce 1litre of Extra Virgin Olive oil, it depends on the variety of olives and the grade of ripeness and 2 hrs are needed to extract the oil out of the fruit.

Sun-dried Tomatoes

Sun-dried tomatoes are a Mediterranean way of conserving tomatoes for the winter.

Carefully selected red, sun-ripe tomatoes are cut in half, spread on a big sheet, sprinkled with sea salt and left to dry in the summer sun. Sun- dried tomatoes can be used in a wide variety of recipes, giving each meal a strong, intensive tomato flavour.
